If you install the stock seat (850mm on the GS) you'll have a seat height of about 870mm, since you have an extra 20mm from suspension travel. For example my Rallye has the sport suspension (read: the GSA suspension) and was originally 870mm, with the low seat it's back to the standard 850mm.
Both front and rear suspension is about an inch shorter. The side and center stands are also shorter (because the bike's ground clearance is lower).
